Staff Favorite Recipe: Broccoli Salad

Yes, it’s really yummy…people went back for seconds!

At a recent staff potluck, this recipe by Laureen Hume stole the show.  Who would have thought something with BROCCOLI would get more comments than goodies and cake?  So many staff members asked for the recipe that we thought we’d share it with our members, too.


Salad Ingredients

Mix the following in a large bowl:

  • 2 heads of broccoli (cut off stems & just use tops)
  • 1 bag of orange and white shredded cheese
  • Small red onion, diced
  • ½ pound cooked bacon, crumbled
  • Optional add-ins: hard boiled eggs, cranberries or nuts


Mix the following together in a small bowl, then pour into the large salad bowl and stir to mix thoroughly:

  • 1 cup mayo
  • ½ cup sugar
  • 2 TBSP white vinegar
